An almond accord smells of bitter almond and marzipan: sweet, with a cherry-like facet. It comes mainly from benzaldehyde, sometimes with heliotrope and tonka. Soft and edible, it suits mild and cool weather and evenings, and gets heavy in humidity when the sweetness runs high.
